Origin

The Rutuma Cooperative Society operates several factories along the southern slopes of Mount Kenya, with Ruthagati being one of them. Smallholder farmers delivering ripe cherries to Ruthagati typically grow SL28, SL34, Batian, and Ruiru 11. The region’s volcanic soils are rich in nutrients, supporting slow, high‑quality cherry development and contributing to the cup’s layered, juicy complexity.
During harvest, farmers bring ripe cherries to the factory, where the team sorts them and removes skin and pulp using a traditional depulper. The parchment then undergoes overnight fermentation before being washed with fresh water from the Keremia stream. Finally, the coffee dries on raised beds under the sun, with continuous sorting and rotation to ensure even drying. The resulting cup is densely sweet, complex, and sparkly.

What Does AA Mean?

• Bean Size: AA refers to the largest screen size in Kenya’s grading system, typically 7.2 to 7.8 mm in diameter (screen size 17/18).
• Flavor Profile: Larger beans grown at higher altitudes develop denser flavor compounds, often showing bright, complex profiles with citrus, berry, or floral notes.
• Density and Roasting: That same density makes AA lots roast evenly, but also means they hold onto structure longer during extraction, which is part of why a standard filter roast can taste sour or underdeveloped when pulled fast under espresso pressure.

What is Turbo roast?

Turbo shot is a technique for pulling light roast, filter-profile coffees as espresso, using a coarser grind and higher flow rate to extract fully without the bitterness a slower, high-pressure pull would cause. This filter profile uses slightly extended development time to give that fast, high-flow extraction the balance and depth it needs to avoid tasting sour or underdeveloped.
