Origin

Kii Factory was originally part of the Ngiriama Cooperative Society until its dissolution, joining the Rungeto Farmers Cooperative Society in 1997. Situated within sight of Mt. Kenya, Kii receives SL28, SL34, Batian, and Ruiru 11 cherries from its 80 farmer members.

Cherries are hand‑sorted before pulping, then fermented overnight, washed, and graded. The parchment dries on raised tables for 8 to 14 days, depending on weather conditions. Kii promotes sustainable practices among its members, encouraging farmers to compost discarded coffee fruit for use as fertilizer and to recycle water from the pulping process.

 

What Does AA Mean?

  • Bean Size: AA refers to the largest screen size in Kenya’s grading system, typically 7.2–7.8 mm in diameter (screen size 17/18).
  • Flavor Profile: Larger beans grown at higher altitudes tend to develop denser flavor compounds, often showing bright, complex profiles with citrus, berry, or floral notes.
  • Roasting Consistency: Their uniform size allows for highly even roasting, making AA lots especially prized by specialty roasters.
