Origin

Tigist Boru is a woman farmer from Beloya, a kebele (village) in Kochere district, Gedio zone. Tigist, a mother of 6, culviates 2.8ha of land at an elevation of 1,705m.a.s.l. She grows coffee with varities known locally as Kumie, Dega and Wilsho, shaded by native cordia africana, Avacia, Ensete and Ventricosum. This washed coffee includes a 36 hour fermentation followed by sun drying on raised African beds.

Turbo Roast

Turbo shot is a technique for pulling light roast, filter-profile coffees as espresso, using a coarser grind and higher flow rate to extract fully without the bitterness a slower, high-pressure pull would cause. This filter profile uses slightly extended development time to give that fast, high-flow extraction the balance and depth it needs to avoid tasting thin or underdeveloped.
