Kenyan Top Lot Tasting Kit

Seven washed Kenyan lots, each scored above 86 SCA by our green coffee merchant Covoya. Selected through primeur tasting, a first look reserved for a limited number of roasters ahead of general allocation. Roasted to preserve acidity structure and cup clarity, rather than soften it for easy drinking. Same washed process, same light Nordic-style profile across all seven, so the variation you taste comes from county, factory, and lot, less from roast style, spanning Nyeri, Murang’a, and Kirinyaga.

What does FCS mean?

FCS stands for Farmers Cooperative Society, the primary organizational unit for smallholder coffee production in Kenya.

A single FCS is typically owned and governed by several hundred to several thousand member farmers, most cultivating under half a hectare each.

Rather than each farmer processing their own cherry, an FCS operates one or more factories, Kenya’s term for a wet mill, where members deliver ripe cherry for sorting, depulping, fermentation, washing, and drying under shared management.

A single FCS name on a bag does not indicate a single farm. It indicates a cooperative structure: many smallholders, one factory, one processing standard.

The factory name (Kii, Kamwangi, Gondo) identifies the specific wet mill within that cooperative, since larger FCS entities often operate several factories across a growing area.

Lot separation happens at the factory level, by delivery day, grade, and processing batch, which is what allows cup differences to be traced back to a specific factory and lot rather than to an individual grower.

What does AA mean?

Bean Size: AA refers to the largest screen size in Kenya’s grading system, typically 7.2 to 7.8 mm in diameter (screen size 17/18).

Flavor Profile: Larger beans are commonly associated with higher-altitude growing conditions in Kenya, and often show bright, complex profiles with citrus, berry, or floral notes.

Density and Roasting: That same density makes AA lots roast evenly, but also means they hold onto structure longer during extraction.

What is Peaberry?

Kenya Peaberry is defined by a natural mutation where a coffee cherry develops a single, round seed instead of the usual two flat-sided beans.

Representing roughly 5 to 10 percent of a harvest, these beans are hand-sorted from the rest of the lot.

They are known for an intense, sweet, and bright citrus profile.

Origin

The Mutheka Farmers’ Cooperative Society (FCS) consists of more than 6,000 active farmer members, and approximately 900 of them use the Kigwandi washing station (factory). The factory, which is part of the Mutheka FCS, uses hydroelectric power from the Kagumo River to run its operations. Smallholder farmers delivering cherry to the Kigwandi factory have an average of 207 coffee trees each and generally farm food crops alongside their small coffee plots.

At the Kigwandi Factory, cherries are collected from the farmers in the region and bulked together, and then fermented in tanks for 48 hours. Thereafter, the beans are soaked for the second, 24-hour fermentation. Once the mucilage is removed, the coffee parchment is taken to raised beds to dry for 2-3 weeks depending on the weather conditions. The double fermentation, often referred to simply as “Kenya Washed” contributes to incredible deep sweetness and complex acidity of this coffee.

Peaberries

Kenya Peaberry is a premium coffee defined by a natural mutation where a coffee cherry develops a single, round seed instead of the usual two flat-sided beans . Representing only 5-10% of a harvest, these rare beans are painstakingly hand-sorted. They are famous for an intense, sweet, and bright citrus profile.

Origin

Established in 1998 in Mathioya District, Muranga County, Gondo Coffee Factory is operated by the New Kiriti Farmers Cooperative Society. The mill works with 727 local farmers who cultivate the varieties of SL28, SL34, Ruiru 11 and Batian at an average elevation of 1,900masl. This ‘top’ grade Peaberry is an exceptional example of how terroir and local expertise combine to deliver intensity and complexity in the cup.

Mathioya Sub-County, located in Muranga County, is a key agricultural region in the central highlands known for tea, coffee, and avocado production. The region is characterized by fertile lands, contributing significantly to both local and export markets. Muranga County, in Kenya’s Central highlands, is home to the slopes and foothills of Mount Kenya. Many rivers run through the region and the soil is rich and volcanic, providing smallholders and cooperatives with the resources to grow and process some of Kenya’s most fruit-forward coffees. Due to the cool temperatures at altitude, particularly at night time, coffees from Kenya’s central highlands tend develop and mature slowly producing very dense, hard beans high in acidity and complexity.

Origin

Kiringa Factory, a part of the Kabare Farmers Cooperative Society, operates with 850 active members. The coffee cherries are harvested at elevations ranging from 1700 to 1900 meters above sea level. The name “Kiringa” comes from the nearby Kiringa river, which is the primary water source for processing coffee at the washing station. The river originates from the Mount Kenya Forest. Situated centrally in Kirinyaga, between Nyeri and Embu counties, the Kabare FCS members primarily cultivate traditional SL28 and SL34 coffee varieties.

Flavor Profile: Larger beans grown at higher altitudes develop denser flavor compounds, often showing bright, complex profiles with citrus, berry, or floral notes.

Density and Roasting: That same density makes AA lots roast evenly, but also means they hold onto structure longer during extraction, which is part of why a standard filter roast can taste sour or underdeveloped when pulled fast under espresso pressure.

What is Turbo roast?

Turbo shot is a technique for pulling light roast, filter-profile coffees as espresso, using a coarser grind and higher flow rate to extract fully without the bitterness a slower, high-pressure pull would cause. This filter profile uses slightly extended development time to give that fast, high-flow extraction the balance and depth it needs to avoid tasting sour or underdeveloped.

Origin

The Rutuma Cooperative Society operates several factories along the southern slopes of Mount Kenya, with Ruthagati being one of them. Smallholder farmers delivering ripe cherries to Ruthagati typically grow SL28, SL34, Batian, and Ruiru 11. The region’s volcanic soils are rich in nutrients, supporting slow, high‑quality cherry development and contributing to the cup’s layered, juicy complexity.
During harvest, farmers bring ripe cherries to the factory, where the team sorts them and removes skin and pulp using a traditional depulper. The parchment then undergoes overnight fermentation before being washed with fresh water from the Keremia stream. Finally, the coffee dries on raised beds under the sun, with continuous sorting and rotation to ensure even drying. The resulting cup is densely sweet, complex, and sparkly.

Origin

Kanjathi Factory was established in the 1960s and is one of five washing stations that are operated by the Kangiri Farmers’ Cooperative Society (FCS), with 1,332 of the 1,338 registered farmers are active members. It is located in Kigumo Sub County in Murang’a County, on the slopes of the Aberdare Ranges.

Murang’a lies around 120 km northwest of Nairobi and benefits from the cool weather and fertile soils of Kenya’s central highlands. Nestled between the eastern base of the Aberdare Range and the southwestern slopes of Mt. Kenya, the region offers ideal conditions for coffee cultivation. Fertile volcanic soil, seasonal rainfall and high altitudes allow cherries to mature slowly, developing rich flavors and potentially large bean sizes.

Kangiri FCS was formed and registered in 2005 following the merger of five single-factory societies that were formerly part of the larger Irati Farmers’ Cooperative, which split in 1997. These factories – New Irati, Kanguya, Kanjathi, Kangurumai and Gatumbi – now serve a total membership of 4,907, with 3,756 active members.

This AA fully washed top lot is from Kamwangi washing station, one of 3 factories managed by New Ngariama Farmers Cooperative Society (FCS) in Kirinyaga county, situated in Kenya’s central highlands. The Co-op works with around 1,500 local farmers who cultivate the varieties of Ruiru 11, SL28 and Batian at altitudes up to 1,800masl. Kamwangi has been consistently producing some of our favourite Kenyan coffees for a few seasons now, a testament to the diligence of their farmers and the factory staff.

Origin

Kii Factory was originally part of the Ngiriama Cooperative Society until its dissolution, joining the Rungeto Farmers Cooperative Society in 1997. Situated within sight of Mt. Kenya, Kii receives SL28, SL34, Batian, and Ruiru 11 cherries from its 80 farmer members.

Cherries are hand‑sorted before pulping, then fermented overnight, washed, and graded. The parchment dries on raised tables for 8 to 14 days, depending on weather conditions. Kii promotes sustainable practices among its members, encouraging farmers to compost discarded coffee fruit for use as fertilizer and to recycle water from the pulping process.

What Does AA Mean?

Bean Size: AA refers to the largest screen size in Kenya’s grading system, typically 7.2–7.8 mm in diameter (screen size 17/18).

Flavor Profile: Larger beans grown at higher altitudes tend to develop denser flavor compounds, often showing bright, complex profiles with citrus, berry, or floral notes.

Roasting Consistency: Their uniform size allows for highly even roasting, making AA lots especially prized by specialty roasters.
